These Philadelphia cheesecake strawberry snack bars are packed full of scrumptious flavors and have layers of textures. These delicious little treats are a throwback to when you could buy these pre-made refrigerated bars from Philadelphia cream cheese company at the grocery stores.
My mom has always been a cheesecake lover, I remember her buying these for a little treat every once in a while for herself. They unfortunately only came with five or six in a box and well, between me and all of my siblings, my mom probably ended up getting to maybe have one for herself lol sorry Mom. #momlife 😅
The real Philadelphia strawberry cheesecake bars were discontinued in the early 2000’s, they said it was because the manufacturing process was too difficult. According to the internet there were some people in real torment about that. At one time there was even a petition going around to try to bring the delicious cheesecake bars back.
This Delicious dessert bar recipe might just become one of your families favorite treats!
This copycat recipe is a delicious treat to bring to a picnic in the summer time or a yummy dessert to serve your family after dinner!
What ingredients do you need to make these little Cheesecake Snack Bars?
- Graham crackers
- Butter
- Philadelphia cream cheese
- Eggs
- Sugar
- Vanilla extract
- Sour cream (can also use plain Greek yogurt)
- Strawberries (fresh strawberries or frozen strawberries)
- Cornstarch
- Lemon juice (lime juice works too)
- Water
Step-by-step instructions to make Philadelphia Cheesecake Strawberry Snack Bars:
Buttery Graham Cracker Crust:
1. Preheat oven to 350 degrees.
2. In a blender or food processor grind your graham crackers into crumbs
3. In a small saucepan or microwave safe dish melt the butter
4. Mix graham cracker crumbs and melted butter together in a small mixing bowl.
5. Grease your 8×11 size pan and dump the graham cracker mixture into it. Spread around and level with a spoon.
6. Press down firmly with a flat wooden paddle spatula or use the bottom of a glass.
7. Bake crust at 350 degrees for about 10 minutes or until slightly brown.
Creamy Cheesecake Layer:
1. In a large mixing bowl combine softened cream cheese, sugar, vanilla and sour cream. Mix on medium speed until combined.
2. Add the eggs, one at a time, mixing in-between until mixture is silky and smooth.
3. Pour cheesecake mixture over baked graham cracker crust and spread evenly.
4. Place back in warm oven and bake for 30-35 minutes or until a toothpick comes out clean. Cheesecake will still be jiggly when you shake the pan.
5. Set on a wire rack to cool completely.
Strawberry Topping:
1. In a medium Saucepan combine strawberries, sugar, water, lemon juice and corn starch.
2. Heat until boiling and then turn the heat down to medium -low.
3. Simmer for about 10 minutes or until mixture is about the consistency of strawberry jam.
4. Use a immersion blender to blend the strawberries, or just mash them with a fork.
5. Let cool completely.
White Chocolate Drizzle Topping:
1. In a small glass dish, melt white chocolate chips in the microwave. (Chocolate burns easily so only do about 30 seconds at a time.)
2. Put melted white chocolate in a ziplock bag or a frosting bag to make the drizzle look nice and uniform.
Assembling the Strawberry Cheesecake Bars:
1. Cut the Cheesecake bars into desired size pieces and place on a plate or cookie sheet
2. Spoon a small amount of strawberry preserves on top of each piece and spread around.
3. Cut the corner off of the ziplock back and drizzle white chocolate across each bar.
4. Serve and enjoy!

Notes and tips:
- Make sure your cream cheese is room temperature so it will be creamy and silky
- I refrigerated these easy Philadelphia cheesecake bars without the toppings over night and when I was ready to serve I spread the preserves and drizzled with chocolate and they were deliciously chilled.
- store in an airtight container in refrigerator for up to a week
- . Store in the freezer and pull one out for a quick dessert!
- Individually wrap these and grab a refrigerated snack bar for an On- the -Go snack (just like old times)
