This one pot taco skillet recipe is a filling and satisfying dinner made in one dish! This One pot dinner is perfect for those busy weeknights, and sure beats fast food, because it only takes 30 minutes from start to finish!

What you need to make One Pot Taco Skillet
Large oven proof skillet
Ground beef
Black Beans
Shredded Cheese
Pre cooked Mexican Rice
Fresh chopped cilantro
Lime juice
Salsa
Olive Oil
Paprika
Chili Powder
Cumin
Onion Powder
Garlic
Tortilla Chips
How to Assemble this One Pot Taco Skillet Recipe
1. Preheat oven to 400 degrees
2. On the stove top heat skillet with olive oil on medium heat
3. Sauté garlic for 2 min
4. Brown the ground beef (or protein of choice) and cook until there is no more pink. Turn off the stovetop heat.
5. Add the seasonings, beans, lime, rice, salsa, half of the cheese, and half of the cilantro
6. Mix together in skillet
7. Crush up the tortilla chips and put on top of the mixture
8. Sprinkle with remaining cheese and cilantro
9. Bake in the oven for 10-15 minutes or until cheese is melted and golden brown.
10. Serve straight from the skillet
How to Serve this One Pot Taco Skillet
This is a complete meal on its own with protein, veggies, dairy and grains so it isn’t necessary to have any sides with it.
There are so many ways you can serve this easy meal, here are a few ideas!
- Scoop up with tortilla chips
- Serve as burritos on corn or flour tortillas
- Serve over a bed of lettuce as a taco salad
- Taco bowls or burrito bowls
- Nachos with queso
Top with your favorite taco toppings
Sour cream
Hot sauce
Green onions
Taco sauce
Jalapenos
Guacamole
Avacado slices
Simple Variations to this Taco Skillet Recipe
- Protein- ground venison, ground turkey, ground chicken, or omit altogether for a vegetarian option.
- Cheese- mexican cheese blend, or Monterey Jack. Freshly grating your own cheese will be the best for melting.
- Rice- use up your leftover rice from another night this week, (any rice will work). You can buy the pre cooked rice that come in little bags at the grocery store. If not using pre-cooked rice you will have to cook this first before adding anything else to the skillet. Use cauliflower rice for a low carb or keto option. Just omit the beans and tortilla chips to make this easy recipe low carb.
- Salsa- I used picante or homemade salsa or whatever you have on hand
- Vegetables- the options are endless if you want to add additional veggies to this recipe- red bell pepper, green chilies, green pepper, white onions, jalapeños, squash, zucchini, tomatoes,
- Tortilla chips- I use a multigrain tortilla chip
- Taco Seasoning- I prefer to use homemade taco seasoning but if your in a pinch you can use a taco seasoning packet.
