They are deliciously fudgy and very chocolatey, you will not be disappointed if you are a chocolate lover like myself!

You just need a few simple ingredients to make these homemade sourdough triple chocolate pop tarts
Ingredients:
- Flour
- Cocoa Powder
- Powdered Sugar
- Salt
- Cold Butter
- Sourdough Discard
- Milk
- Chocolate chips- I used semi sweet but you can use dark or milk chocolate, whatever you prefer
- Vanilla extract
- Egg

- Baking sheet
- Parchment Paper

- Sharp knife or pizza cutter
- Fork
- Small saucepan

What is sourdough discard
Sourdough discard is simply just part of your sourdough starter that you remove before you feed the starter again. You can either discard this or use it in a recipe. Since it is unfed starter, you do not use this to rise your bread or baked goods, it is often used in addition with another rising agent such as baking soda or yeast.
Using sourdough discard in recipes like this have some other benefits though. Since it already has gone through the fermentation process there are still health benefits to using the discard.

How to make homemade chocolate fudge pop tarts
You make these pop tarts in 3 separate steps but don’t let that intimidate you, each step is very simple! This is a fun recipe to get your kids involved in as well!
Chocolate pastry dough
This dough is chocolatey, flaky, and buttery, it is similar to a tart dough or pie dough.
In a mixing bowl combine flour, cocoa powder, powdered sugar and salt, mix it all together.
Next, combine the sourdough discard and milk in a separate bowl and add that into your flour mixture.
With a cheese grater, grate your cold butter into your mixing bowl, you can put your butter in the freezer ahead of time or just take it straight from the fridge. Grating the butter like this will help it to mix into the dry ingredients enough without melting and sticking all together. It helps the dough to be nice and flaky.
Mix this all up with your stand mixer or hand mixer just until combined. You don’t want the butter to get too soft so don’t over mix.
Once your dough is combined, wrap in plastic wrap and put it in the refrigerator to chill for 30 minutes to an hour. If you want to speed up the process you can put it in the freezer for about 20 min.
Now that the dough is chilling lets move on to the filling, and in my opinion, the best part!
Chocolate filling
In a small saucepan melt the chocolate chips and milk over medium heat until it is smooth and silky.
Remove from heat and mix in the butter, vanilla and a pinch of salt. Set aside and cool to room temperature
Assembly
Take the chilled pastry dough out of the refrigerator. Sprinkle a light dusting of cocoa powder on your countertop and with a rolling pin begin rolling the dough into a rectangle. The dough should be about 1/8” thick
Using a pizza cutter or a sharp knife cut the rectangle into 18 equal rectangles. I made mine about 3”x4” in size
Once you have all of your pop tart pieces cut line a cookie sheet with a piece of parchment paper and lay 9 of your rectangles on the sheet
In a small bowl mix together an egg wash (1 egg and 1 Tbs of water) Brush the pastry on the cookie sheet with the egg wash. This will help the edges to seal once we put the filling and the top on
Take your chocolate fudge filling and put about 1 Tbs. on the middle of each pop tart bottom, do not spread around, it will melt and spread while baking
Place the remaining chocolate crust rectangles on top of each of the bottom pieces
With a fork press together all the edges to seal them and give them that unmistakable pop tart vibe 😎
With a sharp knife make a small slit in the top layer of the pop tart, this will help the steam escape and keep the sides from breaking open
Pop this whole pan in the freezer for 20 min to chill
Preheat your oven to 350 degrees
While your oven is preheating, you can whip up the frosting
Chocolate Icing
Melt the butter, then to a mixing bowl add the powdered sugar, cocoa powder and milk, whisk together. This will be the perfect topping for your delicious homemade pop tarts
Take the pop tarts out of the freezer and brush the tops with the rest of the egg wash
Bake in the preheated oven for about 15 minutes or until just slightly crispy
Set aside and cool completely
Frost each one of the pop tarts and sprinkle with chocolate sprinkles, grated chocolate or if you want to get real fancy you could do a white chocolate glaze. If you are adding sprinkles just make sure you do so while the frosting is still wet. Once the frosting sets the sprinkles will no longer stick
EXTRA TIPS
- These pop tarts can be eaten fresh out of the oven while they are still a little warm or can be stored in an airtight container for up to 3 days
- Although pop tarts are often called toaster pastries, you do not want to put these in the toaster, the icing will melt right off!
- If you prefer them warm you can stick them In the microwave or toaster oven for just a few seconds
- If you make these for a special holiday you could cut them into different shapes using a cookie cutter, just make sure you still crimp the sides down with a fork
